Roaster's Notes

This is not your typical Indonesian coffee. It is beautifully crisp and clean where notes of green apple are prominent in the cup. You can still expect some of the classic Indonesian full body, but it's a very refined version of it. Enjoy.


This lot comes from several Toraja coffee plantations located in the mountains of Tana Toraja which are managed by around 30 farmers and are supervised by foreman from the company. Almost all the coffee farms owned by these farmers are inherited from their ancestors. Here coffee is grown using organic fertiliser from livestock. The shade used is mostly lamtoro and dadap trees. Each farmer's household has a small mechanical depulper that they use to process cherry coffee into wet parchment.

The company then buys the wet parchment at a fair price according to the quality of the coffee. Wet parchment is transported to the PT Sulotco Jaya Abadi processing plant for further processing. Wet parchment with a moisture content of 40% is hulled and then dried to become green beans with a moisture content of 11-12%. The coffee is then graded and sorted for quality. Coffee is then packed in grainpro plastic and gunny bag then stored. At the end of the long process, the coffee is checked for defects and cupping before being shipped.

The coffee which is produced at our factory in Bolokan Village, Tana Toraja Regency, then departs by small trucks to the capital of Tana Toraja Regency, Makale City. From the city of Makale then transferred to a larger truck to be sent to an export warehouse in the city of Makassar, South Sulawesi.
