Story

Located in the Campo das Vertentes microregion of Brazil (Ingai - MG), Fazenda Terras Altas is managed by Aurelio Felizali, an agronomist and coffee specialist who has focused on specialty production since graduating in 1990. Aurelio works alongside his wife Sylvia to manage the 300 hectare estate, where coffee serves as the primary family income and 281 hectares are dedicated to coffee cultivation at an elevation of 1100 meters.

As a member of the Cocatrel cooperative, Aurelio leverages his technical expertise to implement precise agricultural practices. Aurelio is deeply committed to sustainable production and maintaining high environmental standards at Fazenda Terras Altas. The farm carries the Rainforest Alliance certification, which reflects his dedication to ethical and ecological farming practices. His approach to land management includes using biological pest controls and organic mineral fertilisers, alongside a renewable energy system. Furthermore, he protects the local ecosystem by maintaining a larger conservation area than required by law and implementing a specific protection plan for the farm springs and local wildlife.

This specific lot consists of 100 percent Yellow Catuai. The cherries were hand-picked and moved to the patio for a slow natural drying process lasting 16 days. Following the drying phase, the coffee underwent a 20 day resting period in storage bins to allow the moisture levels to stabilize before being hulled and delivered to the Cocatrel warehouse.

In the cup, this Yellow Catuai offers a sophisticated expression of the Campo das Vertentes terroir. Roasters can expect a clean and balanced profile characterized by a deep honey-like sweetness and a creamy mouthfeel. The extended drying and resting periods enhance notes of toasted almond and yellow stone fruits, finished with a refined acidity that reflects Aurelio's meticulous processing standards.
